My Valentine Menu

It is weird that Valentine’s Day was a monday but it was still awesome. My husband gave me flowers, I gave him a bottle of wine that he loves, and my daughter got some treats, a book about Valentine’s Day and she got to share Mommy’s balloon and stuffed toy. It was a lovely pre-Valentine weekend and such a sweet day to celebrate it. So it thought, why not post a 3-course Valentine meal? Let me do it then!

For an appetizer let me start you off with our house salad:

HOUSE SALAD (1 serving)

  • 2 c fresh spinach
  • a slice of onions
  • diced half a big tomato
  • 2-3 tbsp chick peas
  • 2-3 tbsp baby bella mushrooms
  • diced 1/4 of an avocado

Toss ingredients in a bowl and add some olive oil and lemon or any dressing you like.

For the main course I have decided to make some beef stew poured over rice. It is a Filipino dish with my own spin.

MECHADO (Beef Stew)

  • 3 lbs diced beef
  • 1 diced big onions
  • 3 minced medium cloves garlic
  • 1 diced bell pepper
  • 3 diced big potatoes
  • 5 diced carrots
  • 4 diced celery stalks
  • 1/4 tsp salt, 1/4 tsp black pepper
  • 3 tbsp soy sauce
  • 1/2 c tomato puree
  • 1-2 c water

Instructions:

  1. Saute garlic and onion until onion is transparent, on high heat. Add bell peppers, wait until softened and add meat.
  2. When meat has browned, sprinkle some salt and pepper. Mix ingredients in the pan, cover. Ingredients can then be transferred to slow cooker OR:
  3. When juices come out, add veggies and cover until mixture boils. If using a slow cooker, add the rest of the ingredients, set on high for about 4 hrs.
  4. Once mixture starts boiling, add soy sauce and tomato puree. Turn heat on medium and cover until it simmers. Stir every 10-15 mins on stove, overy 20-30 mins on slow cooker. On stove, dish should be ready to serve in 1 1/5-2 hrs. Serve over rice or macaroni noodles and pair with some Shiraz. It is really good!

For dessert, I have decided to make it very simple. Choco Fudge Sundae!

  • 1-2 scoops vanilla ice cream or frozen yogurt
  • 1-2 tbsp choco fudge
  • optl: diced brownies, m&ms, nutsor even berry fruits, whipped cream

Instructions:

  1. Place scooped ice cream in a nice medium pasta bowl. Top with warm fudge.
  2. Sprinkle some or any of the optl. Then, top with a little bit of whipped cream. That will end dinner with everybody in a good mood. Hope everyone had a wonderful Valentine’s Day!
