Chocolate Mayonnaise Cake

Since I started baking chocolate cake, I have been hearing about recipes with mayonnaise as one of its ingredients. They said the mayonnaise keeps the cake moist and adds a little flavor. Out of curiosity, I searched for a recipe that was easy to follow , straightforward and have afew ingredients. Indeed I found one off of the internet and baked it. I must say, it was not so bad at all. I just wish that my sister was with me while I bake it. Maybe I would have made frosting with it too, for a little bonus. My sister and I would have killed that cake in 3 days just between the 2 of us. But, with just the cake, at least I had more of an afternoon snack than just a treat. Hey, it’s not so bad after all when you are using whole wheat flour right? Check this out and see how easy this recipe is:

  • 2 c whole wheat flour
  • 1/2 c cocoa
  • 1 1/2 ts b soda
  • 1/4 ts salt
  • 1 c sugar
  • 3/4 c mayonnaise
  • 1 c water
  • 1 ts vanilla

  1. Preheat oven to 350°F,
  2. Sift together dry ingredients.
  3. Cream together sugar, mayo, water and vanilla.
  4. Mix dry and soft ingredients, stir well until blended. Pour batter into greased and floured layer cake pans or a 9×13 in pan. Bake for about 25 minutes until toothpick comes out clean.

*You may add store bought frosting or homemade (like the frosting recipe on my earlier post). Or you may just have it without the frosting, it is also definitely good!
